Spinach with Rice

Ingredients

500 g of frozen spinach (or 1 ½ kilo of fresh spinach)

2 tablespoons of oil

1 chopped onion, medium size

3 tablespoons of pine nuts

250 g of ground meat

2 cloves of garlic

200 g of frozen coriander

½ cup of lemon juice

1 glass of water

Salt and pepper

 

How to Prepare

Put onions with oil in a large bowl over heat, cook until it turns light brown.

Add the pine nuts, then the minced meat while stirring the mixture until the meat becomes tender.

In another bowl, put garlic with oil over heat, then add the coriander and stir well until it becomes tender.

Add the coriander mixture over ground meat.

Then add the chopped spinach with water (in case the spinach is fresh, the leaves are washed and finely chopped)

Add lemon juice, then cover the bowl, and simmer for 15 minutes.

Serve spinach hot with vermicelli rice.
