Pineapple Carrot Cake

Ingredients
2 cups of brown flour
2 teaspoons baking powder
1 teaspoon of baking soda
2 teaspoons cinnamon
½ teaspoon ground ginger
½ teaspoon of nutmeg
Pinch of salt
3 eggs, at room temperature
¾ cup vegetable oil
1 cup of pineapple juice
1 teaspoon vanilla
2 cups grated carrots (no need to peel them)
1 cup chopped pineapple
1 cup chopped walnuts
250 g cheese cream
½ cup of butter, at room temperature
1 cup of fine sugar
1 cup whipped cream
1 teaspoon vanilla
How to prepare
Mix flour with baking powder, baking soda, cinnamon, ginger, nutmeg and salt. Set aside.
In another bowl, beat eggs with oil, pineapple juice, brown sugar and vanilla. Then add it to the other mixture and whisk again.
Add carrots, pineapple and nuts, then stir with a spoon.
Pour the mixture in a butter greased pan and place it in a preheated oven for 45 minutes.
Test the cake doneness with a toothpick, if it comes out dry, then your cake is ready!
Meanwhile, whisk butter with cream cheese well. Add sugar and vanilla then beat again. Add the whipped cream and mix well.
When the cake cools down, cut it into three pieces horizontally. Place the first layer on a cake plate then top it with cream. Again, add another cake layer then cover it with cream, and finally, top it with the last cake layer.
Decorate the top of the cake with cream before putting it in the refrigerator until serving.
