Tomato Soup

Ingredients

2 tablespoons of olive oil

1 tablespoon of butter

1 large onion, chopped

2 tablespoons of flour

2 tablespoons of tomato paste

3 cups of vegetable broth

500 g tomatoes in cans

Seasoning and salt as desired

¼ cup chopped fresh basil

 

How to prepare

In a pan over the heat, melt the butter with the oil, then add onions, wait until light-colored.

Add flour and stir until smooth.

Add tomato paste and stir for 2 minutes. Cut the tomatoes and add them to the mixture with vegetable broth, salt, spices and basil.

Leave it on until boiling, then simmer for 30 minutes.

Blend the mixture with an electric blender until homogenous.

Serve the hot soup with bread.
