Carrot Soup

Ingredients
1 kilo of carrots
3 tablespoons of olive oil
1 onion, chopped medium
2 cloves of garlic
Salt and pepper as desired
4 cups of vegetable broth
2 cups of water
½ teaspoon of cumin
½ teaspoon of coriander
2 tablespoons of butter
How to prepare
Peel carrots and cut them into circles. Put them in a tray and grease with two tablespoons of olive oil. Place the tray in a pre-heated oven until the carrots are browned and cooked.
In a pan over the heat, cook the onions with a tablespoon of olive oil until blonde. Add garlic, salt and pepper then stir for two minutes.
Add the vegetable broth with water, cumin and coriander, then leave the mixture over the heat until boiling.
Let simmer for 30 minutes.
Stir the mixture using an electric blender until homogeneous.
Add butter and serve thot soup with bread.
