Potato Samosa

Ingredients
For the dough
2 ¼ cups of flour
¼ cup of oil
¾ teaspoon of salt
¼ cup of warm water
For the Stuffing
2 tablespoons of oil
1 medium onion
1 tablespoon of freshly grated ginger
Salt and pepper
3 peeled and sliced potatoes
1 cup of peas
½ teaspoon of cumin
½ teaspoon of Indian spices
¼ cup chopped coriander
How to prepare
To prepare the dough, mix the ingredients and knead well. Set aside to rest for 30 minutes.
In a pan over heat, cook onions with oil, ginger, salt and spice. Add potatoes and cook over low heat until done. Add a little more water if needed. Add peas with spices and chopped coriander. Set aside to cool down.
Divide the dough into 16 pieces, then spread each one in circular shape. Place the filling on top of each dough then wrap it in a triangular shape.
To seal the dough perfectly, wet the ends with a bit of water.
Grease the samosa pieces with oil and put them on a tray in a preheated oven for 20 minutes or until the dough become brown.
Serve hot with coriander sauce.
