Cherry Cheesecake Cups

Ingredients

½ cup of cherries (pitted and chopped)

½ cup of water

½ cup of sugar

2 tablespoons of lemon juice

1 tablespoon of starch

1 box of wheat biscuit

½ cup of melted butter

1 cup whipped cream

1 cup of cream cheese

½ cup of powdered sugar

1 teaspoon vanilla

 

How to prepare

In a bowl over the heat, boil the cherries with water and sugar while stirring constantly.

Mix the lemon juice with the starch until the mixture becomes smooth and add them to the cherry mixture.

Cook the sauce until thickened while stirring continuously.

Watch out! The sauce thickens quickly.

Set the sauce aside to cool down to room temperature.

Put the biscuits with butter in the electric mixer then blend until they become homogeneous.

Whisk cream, cheese, sugar and vanilla well together.

In glass cups, place a layer of biscuit, top it with cherry sauce then cream.

Place the cups in the refrigerator for at least 3 hours.

Garnish each cup with biscuits and cherry before serving.
