Spinach and cheddar flaky pastries

Ingredients

2 tablespoons of olive oil

1 onion, chopped

1 tablespoon of honey

Salt and pepper to taste

1 tablespoon fresh mint leaves

¼ teaspoon of nutmeg

1 teaspoon red pepper

1 bag of frozen spinach

1 cup of cheddar cheese

1 cup of mozzarella cheese

1 box of puff pastry

1 beaten egg

 

How to prepare

Cook onions with honey in olive oil for 5 minutes.

Add salt and pepper  it and cook until they become golden. Add mint, avocado and red pepper then cook  for an additional minute. Remove from heat.

Mix spinach with cheddar cheese, mozzarella and add them to the onions.

Spread the puff pastry on a floured surface then divide into 9 pieces.

Stuff pastry with the spinach and onion mixture while leaving the sides empty.

Grease the sides with the beaten eggs then press them with a fork.

Place pastries on a parchment paper and grease the surface with eggs. Place in a preheated oven for 20 minutes or until browned.

Serve hot with honey
