Chickpea sandwich

Ingredients

2 cups of boiled chickpeas

2 tablespoons of lemon juice

½ cup of chopped red onion

1 tablespoon of maple syrup

Salt and pepper to taste

½ cup of chopped cucumber

2 tablespoons of chopped coriander

1 cup of green leaves

8 slices of wholegrain bread

 

How to prepare

Mash the chickpeas using a fork with two tablespoons of water and lemon juice, wait until you get a coarse mixture.

Add onion, maple syrup, salt, pepper, coriander and cucumber. Stir well.

To prepare the sandwiches, put the green leaves and the chickpea mixture evenly into 4 slices of bread.

Place the second piece of bread on top and serve.
