Orange Semolina Cake

Ingredients

1 cup of semolina flour

1 cup of flour

2 teaspoons of baking powder

Pinch of salt

100 ml of orange juice

2 oranges zests

½ teaspoon of vanilla

200g of butter

1 ¼ cup of sugar

3 eggs

 

The sauce

100 ml of orange juice

100g of sugar

 

¾ cup of Greek yogurt

1 tablespoon of ground pistachios

 

How to prepare

Mix semolina flour with flour, baking powder and salt in a bowl.

Mix orange juice with orange zest and vanilla. Set aside.

Whisk butter and sugar well, then add the eggs while whisking until the mixture becomes homogeneous.

Add flour mixture and orange mixture together then beat them well.

Pour the mixture on a tray with parchment paper then place it in a preheated oven for 40-45 minutes.

To prepare the sauce, mix orange juice and sugar in a bowl on the stove, wait until the sugar dissolves completely. Leave it on low heat until it thickens a bit then remove from it and wait until it cools down.

When the cake cools down, pierce it with a fork and pour half the sauce over it.

Spread yogurt on the cake then sprinkle with pistachios.

Serve the cake with the rest of the sauce.
