Avocado and Grapefruit Salad

Ingredients
A handful of fennel, chopped
1 avocado, cut into large cubes
2 chopped grapefruit
2 cups of spinach or watercress
¼ cup of shredded Parmesan cheese
The sauce
¼ cup of fresh grapefruit juice
¼ cup of olive oil
2 tablespoons of balsamic vinegar
1 tablespoon chopped shallots
1 teaspoon of mustard
Salt and pepper (To taste)
How to prepare
Combine fennel, avocado, grapefruit, spinach or watercress in a large salad bowl.
Mix the sauce ingredients well and pour them over the salad mixture.
Add parmesan cheese and serve cold.
