Bruschetta tomato
Ingredients
1 French baguette
2 tomatoes, cut into small cubes
2 red onions, chopped
1 clove of crushed garlic
2 teaspoons shredded parmesan cheese
Salt and pepper to taste
1 tablespoon of olive oil
How to prepare
In a bowl, mix tomatoes, onions, garlic and parmesan.
Add salt and pepper, then olive oil and stir again.
Cut the bread and brush each piece with olive oil, then place it in the oven until browned.
Spread the tomato mixture over the bread and serve.
Risotto balls
Ingredients
4 cups cooked and cold risotto rice
1 cup of flour
2 eggs, beaten
2 cups of bread crumbs
4 cups of oil for frying
How to prepare
Balls are made from rice and dipped in flour, then in eggs and then in breadcrumbs.
Fry in oil for 3 minutes, then drain and serve.
Smoked salmon pancake
Ingredients
1/2 cup self-raising flour
1 egg yolk
1/2 cup of milk
2 tablespoons of fresh dill
80g chopped smoked salmon
12 cup of mascarpone cheese
2 tablespoons of mustard
How to prepare
Whisk together the flour, eggs, milk and dill until combined. Pour a teaspoon in a saucepan over a stove until bubbles appear.
Turn over on the other side, then set aside until cool. Repeat until the amount runs out.
Brush each pancake with mustard and cheese mixture, then place a smoked salmon slice on it and garnish with dill before serving.
