Spring salad with cauliflower and apples

Ingredients
1/4 cup of chickpeas
2 tablespoons of olive oil
Salt and pepper to taste
1 cauliflower, chopped
1 apple, chopped
1 leek, chopped
2 tablespoons of chopped parsley
2 avocados, diced
The sauce
2 tablespoons of mustard
2 tablespoons of honey
1/4 cup of olive oil
1/4 cup of water
2 tablespoons of lemon juice
Salt and pepper to taste
How to prepare
Place the chickpeas in an oven tray with olive oil, salt and pepper. Toast in the oven for 30 minutes.
Put the cauliflower in an electric mixer until it becomes like rice.
Mix the sauce ingredients well.
Combine all ingredients and mix with the sauce.
Serve the salad cold.
