Vietnamese Spring Rolls

Ingredients

12 rice leaves

300 g cooked prawns

100 g noodles

1 cucumber, cut into long sticks

1 fresh red pepper, cut into long sticks

1 cup of chopped red cabbage

1 avocado, cut into long slices

1/4 cup chopped mint leaves

1/4 cup chopped basil leaves

 

The sauce

3 tablespoons of water

1 tablespoon of sugar

1 tablespoon lemon juice

1 tablespoon fish sauce

 

How to prepare

Fill a large bowl with warm water. Dip the rice leaves in the water until they are soft for ten seconds. Spread on a damp kitchen towel and stuff it with vegetables, noodles, prawns and herbs. Wrap with good pressure.

To prepare the sauce, mix all the ingredients together well.

Serve spring rolls with sauce.
