Potato Pancake

Ingredients
3 cups of mashed potatoes
1 egg, beaten
3 tablespoons of flour
1/2 cup of mozzarella cheese
2 onions, chopped
Frying oil
How to prepare
In a large bowl, combine the mashed potato, eggs, flour, cheese and onions. If the mixture is too sticky, more flour can be added until it becomes a cohesive dough.
The dough is made of balls and covered with flour, then pressed into the shape of a thick pancake.
Heat the oil in a frying pan over a medium heat. Put the potato pancakes in the oil and turn until browned on both sides.
Serve hot with chicken in the oven.
