Indian cucumber salad

Ingredients
1/2 red onion, medium size
2 cups of cherry tomatoes
1 cucumber (large)
1 carrot
1/4 cup chopped coriander
3 tablespoons of lemon juice
2 tablespoons of olive oil
Salt and pepper to taste
1/4 teaspoon cumin
How to prepare
Peel the onions and cut into small cubes.
Cut the cherry tomatoes in half.
Cut the cucumber and carrot into small cubes.
Put the vegetables in a large salad bowl, then add the coriander, lemon juice, olive oil, salt and pepper and mix well.
Add cumin and serve the salad cold.
Chopped mint leaves can be added for extra flavor!
