Indian Spiced Veggie Burger

Ingredients
1/2 cup of cooked brown rice
2 medium sized mashed potatoes
2 tablespoons of oil
1 chopped onion
1/2 teaspoon of cumin
1/2 teaspoon of turmeric
1 zucchini, cut into cubes
1/4 cup chopped mushrooms
Salt and pepper to taste
1/2 teaspoon of ginger
1/2 cup chopped spinach
4 teaspoons coriander
4 teaspoons of cornstarch
4 teaspoons of breadcrumbs
4 tablespoons of olive oil
The sauce
4 tablespoons of yogurt
2 tablespoons of mayonnaise
1/2 teaspoon of chili
Salt and pepper to taste
How to prepare
In a pot on the stove, cook onions in oil with cumin and turmeric. Add zucchini, mushrooms, salt and pepper. Leave on fire for 5 minutes. Set aside to cool slightly.
Add the mixture to the rice and potatoes. Add spinach, ginger, cilantro, cornstarch and breadcrumbs. Finally, increase the olive oil, then form circles of the mixture like rounds of burger meat.
Cook the circles in oil on the fire until red.
To prepare the sauce, mix all the ingredients until you get a smooth mixture.
Place the burger circles on the bread with green salad and tomatoes, add the sauce and serve.
