3 quick and easy recipes for an outside picnic

Summer is here, the days are long and the temperatures are high. Why don't we go for a little walk to the mountain? We are so excited to enjoy the beautiful weather and delicious meals with our close family and friends. Here are 3 ideas for preparing quick meals before kicking off to your picnic!
Dip beetroot and yogurt
Ingredients
200 g boiled beetroot
1 crushed garlic clove
3 green onions, minced
3 tablespoons of yogurt
2 tablespoons of lemon juice
How to prepare
Chop the beetroot and put it in the blender with the rest of the ingredients until the mixture is homogeneous. Served with grilled halloumi cheese.
Italian caprese sandwich
Ingredients
4 slices of focaccia bread
Green salad
1 cup shredded fresh mozzarella cheese
2 chopped tomatoes
1 tablespoon chopped basil
olive oil
Salt and pepper to taste
How to prepare
Arrange vegetables on bread slices with mozzarella and tomatoes.
Add basil, olive oil, salt and pepper.
Iced orange tea
Ingredients
4 tea bags
1/4 cup of sugar
2 tablespoons of orange blossom water
2 oranges cut into circles
mint leaves
How to prepare
Put the tea bags with sugar in a large jug and pour 7 cups of boiling water over them. Leave for 15 minutes.
The tea bags are removed, then orange blossom water, orange slices and mint leaves are added. Put in the fridge for 8 hours.
Served with ice cubes.
