Creamy Coconut Beef and Pumpkin Curry

Ingredients

1 tablespoon of oil

1 tablespoon of grated ginger

1 tablespoon of curry

1 kg of shredded veal

400g diced tomatoes

1 cup vegetable broth

600g of chopped pumpkin

1 tablespoon of cornstarch

270 ml of coconut cream

 

How to prepare

Ginger is cooked in oil on the fire with curry and meat.

Add tomatoes and stock. Cover the pot and leave it on the fire until the meat is cooked.

Increase the pumpkin, then cover the pot and leave on the fire until maturity.

Mix the cornstarch with the coconut cream, then add the mixture to the meat and leave it on the fire uncovered for 10 minutes.

Served with rice.
