Eggplant rolls with feta and olives

Ingredients
1 large eggplant, cut into thin slices
olive oil
Salt and pepper to taste
1/2 cup of feta cheese
2 tablespoons olives (pitted)
2 tablespoons of basil
How to prepare
Grilled eggplant on both sides after brushing it with olive oil and seasoning it with salt and pepper.
In a small bowl, combine olives, feta cheese and basil.
Spread the eggplant, then put a tablespoon of the cheese mixture on it and roll it up.
Place the rolls on a serving platter and sprinkle with olive oil and more basil.
Serve as an appetizer alongside the salad.
