Thai quinoa salad

Ingredients

1 cup of cooked quinoa

1 red pepper cut into small slices

1 carrot, peeled and grated

1 cucumber, cut into cubes

2 green onions, thinly sliced

1/4 cup chopped coriander

 

The sauce

1/4 cup of lemon juice

2 and a half teaspoons of soy sauce

1 teaspoon olive oil

2 teaspoons of sugar

1/4 teaspoon hot red pepper

 

How to prepare

To prepare the sauce, mix all the ingredients well.

Mix quinoa, red pepper, carrot, cucumber, onion and coriander. Place in the refrigerator until serving. Add the sauce then serve.
