Moroccan Chickpeas Soup

Ingredients

1 tablespoon of olive oil

1 chopped onion

1 large carrot, peeled and cut into cubes

4 cloves minced garlic

3 cups of vegetable broth

2 cups of boiled chickpeas

4 tomatoes cut into small cubes

3 tablespoons tomato paste

1 teaspoon cumin

1/2 teaspoon of cinnamon

1/2 teaspoon of ginger

Salt and black pepper

3 cups of baby spinach leaves

 

How to prepare

Cook the onions in the oil over a medium heat until they turn golden, then add the carrots. Add garlic and stir for 2 minutes.

Add vegetable broth, chickpeas, tomatoes, tomato paste, cumin, cinnamon and ginger. Bring to boil.

Reduce the heat and add the spinach leaves until slightly softened.

Add salt and pepper and serve hot.
