Avocado-Egg Toast

What’s better than preparing a delicious high-in-protein breakfast in less than 15 minutes? If you’re an avocado lover, this recipe is definitely for you. Avocado-egg toast is a simple savory brekkie; get all the ingredients needed and give it a try!
Ingredients:
• 2 slices of toast (sourdough or artisan bread)
• 1 medium avocado
• 1 or 2 tomatoes
• 4 eggs
• 30g butter
• Salt & pepper
• Lemon zest
• Sesame seeds/ Nigella seeds
• Splash of heavy cream
Instructions:
• Mash the avocado using a fork, then add a pinch of salt and pepper to enhance the flavor
• Slice the tomatoes
• Whisk the eggs, then add half a tablespoon of heavy cream with a pinch of salt and pepper
• Heat the pan, then add the butter. Wait until it turns golden brown
• Pour in egg mixture, and cook for 3 to 4 minutes
• Drizzle the bread with olive oil, then toast it on the pan
• Spread the mashed avocado on the toasts, and divide the scrambled eggs over the avocado
• Add the sliced tomatoes on the toasts, then top with sesame seeds/ nigella seeds and lemon zest
